KEY REQUIREMENTS.

§ Preferably male

§ Minimum KCSE certificate.

§ Certificate in food production, butchery or related field – added advantage

§ Minimum 3 years’ experience in a busy hotel, restaurant or retail butchery.

§ Hands on experience grilling beef, ribs, goat in a busy restaurant hotel or butchery

§ Expertise in charcoal, gas or flame grilling

§ Strong knowledge of different meat cuts and preparation techniques.

§ Understanding of food safety and hygiene standards

§ Physically fit and able to stand for long hours

§ Knowledge of POS/computer

§ Ability to work under pressure in a fast paced environment

§ Customer service skills

§ Good communication and team work skills

§ Book knowledge of recording daily sales

§ Valid food handlers medical certificate

§ Valid good conduct certificate

§ Must be a person of integrity

DUTIES AND RESPONSIBILITIES

§ Cut, trim, debone and portion meat according to standard specifications

§ Prepare beef/poultry and other meat products for display or kitchen use.

§ Grilling Beef, Goat, Chicken, Liver, ribs etc.

§ Minimise waste through efficient cutting techniques.

§ Grind and Mince beef as per requirement

§ Ensure proper weighing of products

§ Inspect meat for quality and freshness

§ Ensure proper storage temperatures are maintained

§ Be able to rotate stock using FIFO method

§ Maintain strict hygiene and sanitation at the work area

§ Clean and sanitise tools, equipment and work surfaces regularly

§ Wear protective gear and follow work place safety protocols

§ Operate and maintain butchery tools e.g. knives, saws, grinders and weighing scale.

§ Proper waste disposal
