DUTIES AND RESPONSIBILITIES
- Prepare and grill a variety of meats including beef, goat, chicken, pork, and other specialty grilled items according to established recipes and quality standards.
- Marinate, season, portion, and prepare meats to ensure consistency in taste and presentation.
- Monitor grilling temperatures and cooking times to achieve optimal quality and customer satisfaction.
- Ensure all food is prepared and served in compliance with food safety and hygiene regulations.
- Inspect ingredients and food supplies to ensure freshness and quality.
- Maintain cleanliness and organization of grilling stations, kitchen equipment, and food preparation areas.
- Manage stock levels for meats, spices, charcoal, and other kitchen supplies, and report replenishment needs.
- Minimize food wastage through proper storage, handling, and portion control practices.
- Work closely with other kitchen and service staff to ensure timely order preparation and delivery.
- Assist in menu development and suggest new grilled food offerings where applicable.
- Follow all company policies, health regulations, and operational procedures.
- Ensure proper maintenance and safe use of grills, cooking equipment, and utensils.
KEY REQUIREMENT SKILLS AND QUALIFICATION
- Certificate in Food Production, Culinary Arts, or a related field is an added advantage.
- Minimum 2 years of proven experience in nyama choma and grilled food preparation.
- Strong knowledge of meat cuts, grilling techniques, seasoning, and food presentation.
- Good understanding of food safety, hygiene, and sanitation standards.
- Ability to work efficiently in a fast-paced environment and under pressure.
- Strong organizational and time-management skills.
- Ability to work flexible hours, including evenings, weekends, and public holidays as required.
- Good communication and teamwork skills.
